Ingredients
180g soft butter
150g caster sugar
3 eggs - room temperature
300g all-purpose flour
1/2 tsp baking powder
1/2 tsp baking soda
1 tsp lemon zest
200g buttermilk
Directions
Sift the flour with baking powder and baking soda.
Set aside.
Cream butter and sugar until soft and fluffy.
Add eggs one at a time and continue to mix well.
Stir in the lemon juice.
Fold the buttermilk and flour alternately.
Pour into the greased baking pan.
Bake at 170°C for about 50 minutes or until the cake is cooked through.
