Recipe (Whole Wheat Pancake)
Ingredients
1 cup whole wheat flour
1 egg, room temperature
A pinch of salt
1/2 teaspoon of baking powder
1/4 teaspoon baking soda
1 tablespoon of olive oil
1 teaspoon of vanilla extract Make buttermilk
1 cup of milk, room temperature
1 teaspoon of lemon juice

Procedure
Prepare the buttermilk. Stir with lemon juice and let stand at room temperature for 5 to 10 minutes. You will notice that the milk will press together. It is the buttermilk needed for the pancakes. Put the flour, baking powder, soda water and salt in a mixing bowl and sift. Mix the sugar with the flour mixture. Stir to mix. Whisk the eggs, buttermilk, olive oil and vanilla extract in a separate bowl for 5 minutes. In the center of the flour mixture, add the liquid ingredients and gently fold until everything is well mixed. There should be no traces of flour left in the dough. Heat the nonstick pancake pan over medium heat. Lubricate it with 1/4 teaspoon of olive oil. Put a big spoonful of batter in the pan. Bake it until bubbles appear on top and edges turn brown. Turn the pancake over and cook on the other side. Cook the remaining pancakes in the same way. Sprinkle a little honey and pistachio sticks over the whole wheat buttermilk pancakes.
