Fresh Seasonal Fruit Tart
Ingredients
one 9" shallow pie shell
one kiwi fruit
one cup cut fresh strawberries
1/2 cup fresh raspberries
one lemon for zest and juice
1/2 cup Mascarpone cheese
1-1/2 cup confectioners sugar
one teaspoon Pure Vanilla Extract
Directions
Bake the pie crust at 375 F for 8 minutes or until light golden brown, let cool completely
Cut fruits
Add cold mascarpone cheese, candy sugar, and vanilla to the mixing bowl and mix well (make sure it is creamy and spreadable
Spread the cooled pie/pie shell and the ingredients in the mixing bowl thoroughly, add the lemon juice and peel, then start adding the fruit, add strawberries, raspberries, and kiwi from the back
Chill for about 30 minutes before slicing and serving
