Servings: 6
Ingredients
- 1 tablespoon olive oil
- 12 Roma tomatoes

- 1 teaspoon black pepper
- 1 teaspoon olive oil
- 1 tablespoon minced garlic
- 2 cups chicken broth
- 1 can (6 ounces) tomato paste
- 1 teaspoon dried parsley
- 1/4 cup cream
Directions
- Preheat the oven to 425.
- Sprinkle 1 tablespoon of olive oil on the baking sheet. Slice 12 Roma tomatoes lengthwise and place them on a baking sheet. Take an oil brush and brush the top of the tomatoes with some olive oil on the baking sheet.
- Sprinkle with salt and pepper.
- Bake in the oven for about 25 minutes or until the tomatoes begin to brown.
- After putting them in a food processor to cool, stir them into a paste (such as ketchup/sauce).
- Put 1 teaspoon of olive oil and garlic in the Dutch oven on the top of the stove.
- Fry until the garlic starts to turn yellow. Add chicken broth, tomato sauce, and romaine tomato puree.
- Stir to mix. After boiling, turn to low heat and cook for about 15 minutes.
- Remove from the heat, stir in the cream and parsley. Serve with your favorite crusty bread or a slimy grilled cheese sandwich. Makes about 6 servings.
